Nature’s PRIME® Chunks Mexican Street Corn Pasta Salad

Yields8 Servings

 1 lb Nature's Meat™ Chunks, cooled to room temperature (4 oz Nature's PRIME Chunks cooked according to package directions)
 1 ½ cups Miniature farfalle pasta uncooked
 15 fl oz Cans corn - drained, pan roasted, cooled
 1 Large avocado - diced
 ½ Bunch green onions - chopped
 ½ Bunch cilantro - coarsely chopped
 1 Jalapeno - finely chopped
 15 fl oz Can black beans - drained
 ¾ cup Olive or canola oil
 3 tbsp Freshly squeezed lime juice
 ½ tsp Lime zest - finely chopped
 ½ tsp Cumin - ground
 ½ tsp Paprika
 ½ tsp Chili powder
 1 tbsp Sriracha or hot sauce
 Salt to taste

In a large bowl, combine Nature's Chunks, pasta, corn, avocado, onions, cilantro, jalapeno and black beans. Gently toss together.


In a small bowl, combine all the dressing ingredients and whisk together.


Gently toss together salad mixture and dressing.


To serve: Portion in bowls or on salad plates. Enjoy!
