Add the onions and ginger and cook, stirring frequently until softened, 5 to 7 minutes. Do not brown onions; reduce the heat if necessary.
Add the spices and cook 2 minutes more. Add the tomatoes, coconut milk, salt, sugar and pepper. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, about 20 minutes or until slightly thickened. Taste and adjust seasoning if necessary, using more salt and sugar.
Add Nature's Poppers to the sauce and simmer until warmed through.
To serve: Portion warm rice into bowls or on plates. Top with Nature's Poppers and sauce. Sprinkle with cilantro. Enjoy!
