Nature’s PRIME® Bits Vegetarian Chile Con Carne

Yields4 Servings

 1 lb Nature's Meat™ Bits (4 oz Nature's PRIME Bits cooked according to package directions)
 3 tbsp Olive oil
 1 medium Onion - small dice
 1 medium Red or Green bell pepper - small dice
 2 cloves Garlic - minced
 1 Jalapeno - chopped fine
 6 Sun dried tomatoes in oil - small dice
 1 ½ cups Vegetable broth
 1 cup Brown lentils - cooked
 1 can (15 oz) Kidney beans - drained
 ½ can Sweet corn or 1 cup frozen
 1 can (14 oz) Diced tomatoes
 1 tbsp Tomato paste
 1 tsp Cumin
 2 tsp Paprika
 2 tsp Oregano
 Salt to taste

In a large pot over medium heat, add oil and vegetables.
Cook for 3-4 minutes, stirring occasionally.


Add the broth, beans, lentils, corn, and chopped tomatoes, stir well.
Add the tomato paste, stir well.
Season with cumin, paprika, oregano, and salt to taste.


Add Nature’s Bits, stir.
Simmer on medium heat for 20 minutes, stirring occasionally.
