Mix together garlic and oil. In a large pot over medium-low heat, add garlic oil mixture and vegetables. Cook, stirring occasionally, 5 to 8 minutes.
Add stock and increase heat to a quick boil. After reaching a boil, lower to simmer. Cook 30 minutes or until vegetables are tender.
Add Nature’s Shreds and noodles. Season with salt and pepper. Enjoy!
