Thai Curry Nature’s PRIME® Nuggets

Ingredients
 1 lb Nature’s Meat™ Nuggets (4 oz Nature’s PRIME Nuggets cooked according to package directions)
 1 tbsp Vegetable or Coconut oil
 4 tbsp Yellow curry paste
 2 Cans (15 ounces each) coconut milk
 2 cups Vegetable or Chicken broth
 4 Medium-size carrots, peeled and sliced into 1/8" rounds
 4 Medium-size potatoes, peeled and cut into bite-size pieces
 1 Yellow onion, sliced into 4 wedges, then halved
 1 ½ tsp Fish sauce (Thai or Vietnamese)
 ¾ tsp Salt
 1 ½ tsp Sugar
 Cilantro, for garnish
 3 cups Cooked Jasmine or favorite rice, held warm
Instructions

Bring a pot of lightly salted water to a boil, add potatoes, and cook until fork tender. Drain and set aside.

In a large pot over medium heat, add oil, heat to hot, add curry paste. Cook for 1 minute, add coconut milk and broth, and stir. Bring to a boil then lower to a simmer and cook 5 minutes.

Add in carrots and onions. Cook until carrots are fork-tender, add in cooked Nature’s Nuggets. Heat for 10 minutes, add potatoes.

Stir in fish sauce, salt, and sugar, adjust to taste.

Serve over rice and garnish with cilantro. Enjoy!
