In a large pot over medium heat, add oil, heat to hot, add curry paste. Cook for 1 minute, add coconut milk and broth, and stir. Bring to a boil then lower to a simmer and cook 5 minutes.
Add in carrots and onions. Cook until carrots are fork-tender, add in cooked Nature’s Nuggets. Heat for 10 minutes, add potatoes.
Stir in fish sauce, salt, and sugar, adjust to taste.
Serve over rice and garnish with cilantro. Enjoy!
