6 oz Nature’s Meat™ Mini Bits, slightly chilled (1.5 oz Nature’s PRIME Mini Bits cooked according to package directions)
1 cup Firmly packed, Fresh Baby Spinach - chopped
1 medium Carrot - small dice
⅓ cup Kernel corn
⅓ cup Cooked black beans
½ cup Edamame
2 tbsp Sundried tomatoes in oil - chopped
⅓ cup Cooked barley
¼ cup Walnuts - chopped
⅓ cup Whole almonds
1 cup Green cabbage - thinly sliced
Dressing
4 tbsp Extra virgin olive oil
¼ cup Champagne vinegar (or to taste)
¼ cup Canola oil
1 tbsp Honey
2 medium Garlic cloves - minced
1 tbsp Dijon mustard
¼ tsp Sea salt (or to taste)
Fresh black pepper to taste
Instructions

Combine dressing ingredients, stir well, set aside.

In a large mixing bowl, combine salad ingredients, pour in dressing, toss to blend. Enjoy!
