Instructions
 1 lb Nature’s Meat™ Mini Pieces (4 oz Nature’s PRIME Mini Pieces cooked according to directions)
 3 tbsp Olive oil
 1 cup Onion, chopped
 1 cup Green bell pepper, chopped
 1 cup Red bell pepper, chopped
 3 tbsp Garlic, minced
 1 tsp Curry powder
 Salt and Ground pepper, to taste
 15 oz (2 cans) Petite diced tomatoes in juice
 1.50 cups Red or Brown dry lentils
 4 tbsp Shredded sweetened coconut
 Prepared vegetable broth (approx. 2 cups or as needed)

Instructions

In a large pot or skillet over medium heat, add olive oil, heat. Add onion, green and red bell pepper, garlic, curry powder, salt, and black pepper; cook, stirring often until onions have softened, about 5 minutes. Stir in diced tomatoes, bring to a simmer.

Stir in Nature’s Mini Pieces, lentils, and coconut. Cover and simmer gently, adding vegetable broth as needed, until lentils are tender, about 15 to 20 minutes. Portion into bowls, sprinkle with additional curry powder if desired. Enjoy!
