Ingredients
 1 lb Nature's Slices (Nature's PRIME Slices cooked according to directions)
 2 tbsp Olive oil
 ½ tsp Ground cumin
 ½ lb Fresh mushrooms - sliced
 1 Medium green pepper - chopped
 1 Small onion - chopped
 1 Celery rib - chopped
 1 Clove garlic - chopped
 ½ cup Frozen corn - thawed and drained
 1 can (15 oz) Black beans - drained
 2 cups Salsa - mild or spicy
 2 cups Cooked white rice, held warm
 ¼ cup Sour cream
 ¼ cup Shredded Cheddar, Monterey Jack or Cotija cheese
 1 tbsp Green onion - chopped

Instructions

In a large skillet over medium high heat, add the olive oil and cumin. Heat to hot and then add mushrooms, green pepper, onion, celery, garlic, corn and beans. Bring to simmer. Stir in Nature’s Slices and salsa. Return to simmer and cook 8-10 minutes.

Portion rice into bowls and top with mixture. Garnish with sour cream, cheese, and green onions. Enjoy!
